STEP BY STEP HOW TO MAKE VEGAN VEGETABLE LASAGNA

Ingredients:

  • 1 package of pre-cooked lasagna sheets (or traditional lasagna noodles)
  • 2 medium zucchini, cut into thin slices
  • 2 medium carrots, peeled and thinly sliced
  • 1 medium eggplant, thinly sliced
  • 1 large onion, chopped
  • 3 cloves of garlic, chopped
  • 500g tomato sauce
  • 200g grated vegan cheese
  • Olive oil
  • Salt and pepper to taste
  • Oregano to taste
  • Fresh basil for garnish (optional)

Directions:

Preparing the vegetables:

  • In a large frying pan, heat a little olive oil.
  • Sauté the onion and garlic until soft and lightly browned.
  • Add the zucchini, carrot and eggplant slices to the pan.
  • Season the vegetables with salt, pepper and oregano to taste.
  • Cook the vegetables for about 5 minutes, or until they are soft but still firm. Set aside.

  • In an ovenproof dish, spread a thin layer of tomato sauce on the bottom.
  • Place a layer of lasagna sheets on top of the tomato sauce.
  • Then add a layer of the sautéed vegetables on top of the lasagna sheets.
  • Sprinkle a portion of the grated vegan cheese over the vegetables.
  • Repeat the layers of lasagna sheets, vegetables and vegan cheese until all the ingredients have been used, ending with a layer of vegan cheese on top.

Bake the lasagna:

  • Cover the pan with aluminum foil and place in the preheated oven.
  • Bake the lasagna for about 30-40 minutes, or until the vegan cheese is melted and bubbling.
  • Remove the lasagna from the oven and let it rest for a few minutes before serving.
  • Garnish with fresh basil leaves, if desired, and serve hot.
