STEP BY STEP HOW TO MAKE VEGAN STUFFED MUSHROOMS
Ingredients:
- 12 large mushrooms, cleaned and stems removed
- 1 cup breadcrumbs
- 1 cup fresh spinach, chopped
- 1/2 cup dried tomatoes, hydrated and chopped
- 1/2 cup chopped mushrooms (part of the stems removed)
- 1/4 cup red onion, finely chopped
- 2 cloves of garlic, chopped
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Soy sauce to brush on
Directions:
- Preheat the oven to 360º F or 180°C.
- Heat the olive oil in a frying pan and sauté the onion and garlic until golden brown.
- Add the chopped mushrooms, spinach, dried tomatoes and oregano. Cook until the ingredients are soft.
- Mix in the breadcrumbs to form a cohesive dough.
- Stuff each mushroom with the prepared mixture.
- Place the stuffed mushrooms on a baking sheet, brush with soy sauce and bake for 20-25 minutes, or until golden brown.
