STEP BY STEP HOW TO MAKE VEGAN STUFFED MUSHROOMS

Ingredients:

  • 12 large mushrooms, cleaned and stems removed
  • 1 cup breadcrumbs
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried tomatoes, hydrated and chopped
  • 1/2 cup chopped mushrooms (part of the stems removed)
  • 1/4 cup red onion, finely chopped
  • 2 cloves of garlic, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Soy sauce to brush on

Directions:

  • Preheat the oven to 360º F or 180°C.
  • Heat the olive oil in a frying pan and sauté the onion and garlic until golden brown.
  • Add the chopped mushrooms, spinach, dried tomatoes and oregano. Cook until the ingredients are soft.
  • Mix in the breadcrumbs to form a cohesive dough.
  • Stuff each mushroom with the prepared mixture.
  • Place the stuffed mushrooms on a baking sheet, brush with soy sauce and bake for 20-25 minutes, or until golden brown.
