STEP BY STEP HOW TO MAKE VEGAN POKE
Ingredients:
- 2 cups of cooked sushi rice
- 200g firm tofu, cut into cubes
- 1 ripe avocado, cut into slices
- 1 large carrot, cut into thin strips
- 1 Japanese cucumber, cut into thin slices
- 1 cup cooked edamame
- 1/4 cup soy sauce
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon grated ginger
- 1 teaspoon chopped garlic
- Sesame seeds and chopped spring onions for garnish
Directions:
- In a small bowl, mix the soy sauce, sesame oil, rice vinegar, brown sugar, grated ginger and chopped garlic to make the poke sauce.
- In another bowl, place the diced tofu and pour half of the poke sauce over it. Leave to marinate for at least 15 minutes.
- Divide the cooked sushi rice into four bowls.
- Arrange the marinated tofu, avocado, carrot, cucumber and edamame over the rice in each bowl.
- Drizzle the poke with the remaining poke sauce.
- Sprinkle with sesame seeds and chopped spring onions before serving.
