STEP BY STEP HOW TO MAKE VEGAN POKE

Ingredients:

  • 2 cups of cooked sushi rice
  • 200g firm tofu, cut into cubes
  • 1 ripe avocado, cut into slices
  • 1 large carrot, cut into thin strips
  • 1 Japanese cucumber, cut into thin slices
  • 1 cup cooked edamame
  • 1/4 cup soy sauce
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon chopped garlic
  • Sesame seeds and chopped spring onions for garnish

Directions:

  • In a small bowl, mix the soy sauce, sesame oil, rice vinegar, brown sugar, grated ginger and chopped garlic to make the poke sauce.
  • In another bowl, place the diced tofu and pour half of the poke sauce over it. Leave to marinate for at least 15 minutes.
  • Divide the cooked sushi rice into four bowls.
  • Arrange the marinated tofu, avocado, carrot, cucumber and edamame over the rice in each bowl.
  • Drizzle the poke with the remaining poke sauce.
  • Sprinkle with sesame seeds and chopped spring onions before serving.
