STEP BY STEP HOW TO MAKE VEGAN CURRY

Ingredients:

  • 2 tablespoons vegetable oil

  • 3 cloves of garlic, chopped
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder

  • 400 ml coconut milk
  • 400 g tomatoes, chopped
  • 2 carrots, sliced
  • 1 sweet potato, peeled and diced
  • 1 eggplant, diced
  • 1 cup broccoli, separated into small bouquets

How to make

  • In a large saucepan, heat the vegetable oil over medium heat.
  • Add the onion, garlic and ginger, sautéing until golden and aromatic.

  • Pour the coconut milk into the pan, followed by the tomatoes, carrots, sweet potato, eggplant and broccoli.
