With a variety of fresh vegetables like tomatoes, zucchini, eggplant, and bell peppers, Ratatouille is not only a feast for the eyes but also a wholesome and satisfying meal that’s perfect for any occasion.

STEP BY STEP HOW TO MAKE RATATOUILLE

INGREDIENTS:

  • 2 medium zucchini
  • 1 medium eggplant
  • 2 red peppers
  • 2 yellow bell peppers
  • 4 medium tomatoes
  • 1 medium onion
  • 4 cloves of garlic
  • 1/4 cup olive oil
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper to taste
  • Basil leaves for garnish

METHOD:

  • Preheat the oven to 180°C.
  • Slice all the vegetables thinly and evenly.
  • In a baking dish, intersperse the vegetable slices, overlapping slightly.
  • Mix the chopped garlic, thyme, rosemary, salt and pepper in the olive oil. Drizzle over the vegetables.
  • Cover the baking sheet with aluminum foil and bake for 45 minutes.
  • Remove the foil and bake for another 15 minutes until the vegetables are golden brown.
  • Garnish with basil leaves before serving.
