STEP BY STEP HOW TO MAKE RATATOUILLE
INGREDIENTS:
- 2 medium zucchini
- 1 medium eggplant
- 2 red peppers
- 2 yellow bell peppers
- 4 medium tomatoes
- 1 medium onion
- 4 cloves of garlic
- 1/4 cup olive oil
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- Salt and pepper to taste
- Basil leaves for garnish
METHOD:
- Preheat the oven to 180°C.
- Slice all the vegetables thinly and evenly.
- In a baking dish, intersperse the vegetable slices, overlapping slightly.
- Mix the chopped garlic, thyme, rosemary, salt and pepper in the olive oil. Drizzle over the vegetables.
- Cover the baking sheet with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for another 15 minutes until the vegetables are golden brown.
- Garnish with basil leaves before serving.
