STEP BY STEP HOW TO MAKE EGGPLANT AND TOFU CANNELLONI

- 2 large eggplants
- 200g firm tofu
- 2 chopped garlic cloves
- 1 chopped onion
- 1 cup tomato sauce
- 1 tablespoon olive oil
- Salt and pepper
- 1 teaspoon oregano
- 1 teaspoon dried basil
- 8 sheets of pre-cooked lasagna pasta

Preparing the eggplant:
- Cut the eggplants into thin slices lengthways.
- Season the eggplant slices with salt and leave to rest for about 15 minutes to release excess moisture.
- After this time, pat the eggplant slices dry with paper towels.

- Cover the cannelloni with the rest of the tomato sauce.
