STEP BY STEP ON HOW TO MAKE VEGAN PRETZELS

Ingredients:

FOR THE MASS:

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 packet (or 2 1/4 teaspoons) of dry biological yeast
  • 4 cups wheat flour

FOR THE ALKALINE SOLUTION

  • 1/2 cup baking soda
  • 9 cups of water

Directions:

  • In a large bowl, mix the warm water, sugar and salt. Sprinkle the yeast over the mixture and leave to rest for 5-10 minutes until it foams.
  • Gradually add the wheat flour to the yeast mixture, stirring continuously, until a dough forms.
  • Knead the dough on a floured surface for about 7-10 minutes, or until it is elastic and smooth.
  • Place the dough in a greased bowl, cover with a damp cloth and leave to rise in a warm place for about 1 hour, or until doubled in size.
  • Preheat the oven to 428º F or 220°C.
  • Dissolve the bicarbonate of soda in the water in a large saucepan and bring to the boil.
  • Divide the dough into pieces and form thin strands. Shape the pretzels and dip each one in the boiling alkaline solution for 30 seconds.
  • Place the pretzels on a baking sheet lined with baking paper.
  • Bake for 12-15 minutes or until golden brown.
  • Remove from the oven and allow to cool before enjoying.
