STEP BY STEP HOW TO MAKE VEGAN LEEK RISOTTO

  • 1/2 cup dry white wine

  • Continue adding the stock, one ladle at a time, stirring constantly and waiting for the liquid to be absorbed before adding more. This will take about 18-20 minutes. The rice should be creamy and al dente.
  • If you are using nutritional yeast, add it to the risotto and mix well.
  • Season with salt and pepper to taste.
  • Serve the vegan leek risotto garnished with chopped fresh parsley.
